Salt flakes are a gourmet sea or underground salt which is not refined and is used in cuisine for its taste.
The process through which salt flakes are obtained is slow and it is made manually. It consists in leaving the sodium chloride crystals to pop on the surface of the saline and dry thanks to the sun and wind. The salt is gathered with shovels early in the morning so the flakes do not break. They are so fragile that they may even be broken by the wind.
They are mainly used to finish meat, fish or vegetal dishes.
Salt flakes can be bought with different tastes such as citruses, smoke, garlicky, spicy or with herbs.
