Depending on the season, the flower origin and the collection time, honey contains between 17 -20% of water and 76 -80% of sugar (mainly glucose and fructose, as well as a bit of sucrose).
Its energetic value is higher than that of sugar, it is processed better and its sugars are more easily absorbed by our body.
