Paella with rabbit, clams , mussels and garlic cream

Elaboration
- Make a white stock.
- Cut the vegetables:
- Brunoise the garlic.
- Cut the carrots and runner beans into very fine julienne.
- Clean the mussels,steam until open and remove one of the shells from them.
- Wash the clams and put them in salted water to get rid of the sand.
- Clean and cut up the rabbit.
- Rice elaboration:
- Sauté the garlic and rabbit and leave it aside.
- Prepare the "Mise en place".
- Heat the rabbit in a gastronorm and add the rice.When everything is hot soak with the stock and add the garnish, clams, vegetables and mussels. Add some lemon juice and season with salt
- Put into the oven for 15 minutes, remove and let it rest for 5 to 10 minutes. Sprinkle with powdered parsley.
- Garnish with garlic mousseline.
