Elaboration
  • Make a  white stock
  • Cut the vegetables:
    • Brunoise the garlic.
    • Cut the carrots  and runner beans into very fine julienne. 
  • Clean the mussels,steam until open and remove one of  the shells from them. 
  • Wash  the clams and put them in salted water to get rid of the sand.
  • Clean and  cut up the rabbit.
  • Rice elaboration: 
    • Sauté the garlic and rabbit and leave it aside.
    • Prepare the  "Mise en place".
    • Heat the rabbit in a gastronorm and add the rice.When everything is hot soak  with the stock   and add the garnish, clams, vegetables and mussels. Add some lemon juice and season with salt
    • Put into the oven for 15 minutes, remove and let it rest for 5 to 10 minutes. Sprinkle with powdered parsley.
  • Garnish with garlic mousseline.
