Elaboration
- Forrar el molde o la tartaleta con el hojaldre amasado previamente pinchado.
- Cocer en blanco.
- Elaborar el relleno de la tatareta:
- Mezclar el coco rallado, el azúcar y la leche. (Si hay unos recortes de bizcocho añadir a la mezcla.)
- Rellenar y cocer la tartaleta a 200 ºC en horno modular con una graduación de 3/4/3 durante 15-20 minutos.
- Sacar del horno y dejar enfriar.
- Elaborar el merengue italiano y meter en una manga con boquilla lisa del 20.
- Rellenar las tartaletas con el merengue haciendo 5 remolinos o anillas.
- Terminar decorando con la cobertura negra atemperada y la yema pastelera rebajada con el almíbar.
