Elaboration
- Poner la alubia roja limpia a remojo el día anterior.
- Picar la cebolla en brunoise, el puerro en medias lunas y la zanahoria en dados de 1cm.
- Limpiar la berza y cortarla en juliana.
- Pelar y filetear el ajo.
- Cocer la alubia roja a fuego suave y continuo hasta que esté muy tierna junto con la cebolla, puerro y zanahoria. Si fuera necesario cocer a presión.
- Elaborar una salsa de tomate.
- Cocer la berza a la inglesa, refrescar. Hacer un refrito con el ajo y añadírselo a la berza.
- Cuando la alubia ya esté cocida añadir la salsa de tomate, poner a punto de sal y de espesor.
- En el momento de servir, añadir la berza a las alubias y darle un hervor al conjunto.
