Elaboration
For this recipe, the following elaborations are needed:
- Basic plain sponge cake
- Basic syrup and
- Confectioner's custard
- Whipped cream with sugar
- Strawberry coulis
SET UP
- Cut the cake into three layers of the same thickness.
- Soak the cake with the basic syrup and cover it with cream.
- Repeat this process with the next layer.
- Finish the cake and soak.
- Cover with the confectioner's custard and sprinkle with sugar. With the help of a cake burner, burn the surface.
- Glaze with gel.
- Decorate the cake with whipped cream with the help of a pastry bag with a curly nozzle.
- Serve with strawberry coulis.
