Elaboration
- Simmer the onion cut into brunoise with the oil.
- Add the cleaned fish and cut into small cubes, let it cook.
- Add the flour all at once and cook it without browning.
- Pour in the milk and the cream and boil until the flour taste disappears.
- Add the salt, the pepper and the nutmeg.
- Let it cool and give the desired shape.
- Flour the croquettes then dip in egg and breadcrumbs.
- Fry the croquettes in plenty of oil (let them float) and remove them on to absorbent paper.
- Serve with a sauce like tartar or garlic.
