Elaboration

Mix the sugar, salt, cornstarch, cocoa, and vanilla flavoring.

Add a little milk and stir well until everything dissolves.

Add the remaining milk and stir. Place a saucepan over medium heat.

When hot, add the butter.

Stir constantly to prevent it from sticking to the bottom of the pan.

When it boils, let it simmer for 3 minutes. Turn off the heat and remove from the heat.

Transfer the cream to a gastronorm container and seal it with film. Shake and cool until lukewarm.

When lukewarm, place in a piping bag.
