Para esta receta, es necesaria la siguiente elaboración:

- Cocer a la inglesa por separado las vainas, las zanahorias, la coliflor, el brécol, las alcachofas y los guisantes. Abatir y reservar.
- Estofar los champiñones. Abatir y reservar.
- Colocar las verduras armoniosamente en las barquetas, 300 g y repartir 100 g de salsa en cada una.
PASTEURIZACIÓN
- Termosellar las barquetas, y colocar la válvula con la valvopack.
- Meter al horno de vapor 100% de humedad previamente caliente a 96 ºC durante 60 minutos.
- Abatir (temperatura corazón a menos de 8 ºC en menos de dos horas).
- Conservar en cámara frigorífica entre 0 ºC y 4 ºC.
REGENERACIÓN
- En la misma barqueta, regenerar en horno vapor 100% de humedad.
- O en el microondas 3 minutos a máxima potencia.
- Otra forma de regeneración consiste en sacar el producto del envase y calentar al fuego en una cazuela.
