White beans stew with shrimps and clams

      Elaboration
    - Prepare an American sauce, but don’t thicken it. Preferably made the previous day, as you need it cold to cook the beans.
- Boil the beans, previously soaked, in the American sauce. It has to boil slowly and continuously so that beans don’t break.
- Stir fry the peeled shrimps, and open the clams with the vapour from a piece of fumet or American sauce.
- Once the beans are cooked, add salt and thicken.
- The shrimp and clam garnish is added at the end.
- Sprinkle parsley cut into brunoise.
- Optional, add mussels.
