Trout
Trout is the name given to several species and subspecies of the Salmo genus, the same as salmons have. There are fresh and saltwater species.
It’s a fish with a long, silver and smooth body, with spots of different colours.
Their colours vary depending on species, light, age or even their state of mind. The flesh can be white or rosy depending on their diet. This way we can distinguish between white and salmon trouts.
Depending on the species the length and weight will vary. Common trouts measure 30-40 cm, although they can reach 80 cm and a weight of 15 kilos. The most common weight is between 250 g (a portion) to 6 kilos in bigger specimens.
They feed on any kind of animal such as small fishes, crustaceans and insect larvae. When grown in captivity their food consists on fish flour pellets with natural pigments, vitamins and minerals.
In Spain, most of the trouts come from fish farms and in a smaller proportion from sport fishing. Sea trouts are fished in the water of the Cantabrian Sea and the rivers where they spawn.
