It is a dessert wine since its intense sweet flavour can enhance the taste of many sweet desserts such as cakes, ice creams, etc.
Nowadays it is becoming very popular the pairing of Pedro Ximénez wine in some meat elaborations or dishes with Pedro Ximénez sauces, usually reduced to 50%, which gives a pronounced sweet taste.
