Elaboration
  • Simmer the onion cut into brunoise with the oil. 
  • Add the cleaned fish and cut into small cubes, let it cook.
  • Add the flour all at once and cook it without browning.
  • Pour in the milk and the cream and boil until the flour taste disappears.
  • Add the salt, the pepper and the nutmeg.
  • Let it cool and give the desired shape.
  • Flour the croquettes then dip in egg and breadcrumbs.
  • Fry the croquettes in plenty of oil (let them float) and remove them on to absorbent paper. 
  • Serve with a sauce like tartar or garlic.
