Elaboration
- Cut the onion, the green pepper, the red pepper and the courgetti into dice of 1 cm.
- Make a concassé tomato.
- Poach the vegetables by order of hardness. Poach the onion and when it is half-cooked add the green pepper.
- When it is almost poached, add the courgetti and leave it cooking for a moment. Mix with the concasseé tomato.
- Salt to taste.
