For the menestra:

  • Steam or boil the menestra with plenty of salted water and uncovered.

For the lamb:

  • Cook vacuum-packed in the steam oven to 65 ºC for 18 hours.
  • To serve, take the lamb out of the bag and put it in the oven (not steam oven): For 10 minutes for each side at 180 ºC.

SERVING

  • Heat the menestra.
  • Fry some sliced garlic and pour it over the hot menestra.
  • Place the lamb on the plate together with its own gravy.
