Elaboration
  • Preheat the oven to 180 ºC.
  • Whisk the eggs and the sugar.
  • Add in the orange and lemon zest and juice. Mix.
  • Incorporate the olive oil.
  • Add in the flour and raising agent (which have previously been sifted) and continue whisking. Mix using a rubber spatula, gently fold the mixture.
  • Pour the mixture into the cupcakes cases and fill until 3/4 of its capacity.
  • Bake at 180ºC for approximately 20 minutes.
