Elaboration
- Preheat the oven to 180 ºC.
- Whisk the eggs and the sugar.
- Add in the orange and lemon zest and juice. Mix.
- Incorporate the olive oil.
- Add in the flour and raising agent (which have previously been sifted) and continue whisking. Mix using a rubber spatula, gently fold the mixture.
- Pour the mixture into the cupcakes cases and fill until 3/4 of its capacity.
- Bake at 180ºC for approximately 20 minutes.
