Elaboration
- Preheat the oven to 210 ºC.
- Make beurre noisette by cooking butter up to 150 ºC. Being careful not to burn it.
- Strain the butter.
- Mix flour, almonds, sugar and then add the egg whites one by one.
- Add the beurre noisette, blend everything together and pour it into bite-sized silicone moulds.
- Cook at 210 ºC.
- The approximate cooking time is 25-30 minutes.
Notes
- In a modular oven, program 3 (ceiling)-4 (mouth)-3 (floor), air intake open.
