Elaboration
- Peel the artichokes and cook in a vacuum at 90 ºC for 45 minutes in the following way:
- On one side, peel and prepare the artichokes with butter and soy sauce (for purée).
- On the other side, prepare them with olive oil and salt (as garnish or dish).
- They can also be cooked in a vacuum without being peeled: at 100 ºC temperature and 55 minutes cooking time.
- Once cooked, reduce the temperature to 2 ªC and keep in a freezer.
