Elaboration
- Preheat the oven to 190 ºC.
- Mix the sugar and the instant coffee together. Set aside.
- Soften the margarine in the stand mixer with the flat beater on. Add in the sugar and coffee mixture and mix until just combined.
- Incorporate the egg yolk.
- Add in the flour (which has previously been sifted).
- Divide the dough into cookies of 8-10 g.
- Bake at 190 °C for 15 minutes.
- Let them cool down completely and then coat them with melted milk chocolate.
