Elaboration

For this recipe, the following elaborations are needed:

SET UP

  • Boil the milk with the broken cinnamon, grated orange and lemon.
  • Mix the sugar with the cornstarch and dissolve it with a little of the infused milk.
  • Add the mixture to the eggs previously beaten in a bowl.
  • Remove the aromatic elements from the infused milk and homogenize in a saucepan with all the previous mixture.
  • Work the whole until it boils and thickens.
  • Pour it onto a plate previously greased with oil or covered at the base with a food film and cover it with a food film as well and put it to cool in a refrigerator.
  • Once cold, cut with a knife into filets, rectangles or other shapes made with a pastry cutter.
  • Coat and fry in plenty of oil at a moderate temperature (about 160 ºC - 170 ºC).
  • Place on absorbent paper to degrease them as best as possible.
  • Serve 2 units per serving coated with a mixture of sugar and ground cinnamon.
  • Accompany with a little raspberry sauce.
