Elaboration
- Cortar en juliana la cebolla, y en medias lunas la zanahoria y el puerro.
- Trocear en cuartos el tomate.
- Elaborar un fumet con el potenciador de sabor de pescado.
- Pochar la verdura por orden de dureza (cebolla, zanahoria, puerro y tomate).
- Saltear y flambear con el brandy las cáscaras de langostino, y añadir sobre las verduras pochadas.
- Añadir el arroz y rehogar.
- Añadir el fumet y dejar cocer tapado durante 30 minutos.
- Triturar con la Thermomix a velocidad máxima durante 1 minuto. Tamizar (pasar por el colador).
- Levantar (volver a hervir) y poner a punto de sal.
