Elaboration
- Wash and deseed the apples, put them in a metal tray with wine and sugar.
- Cover and bake at 180 ºC until the apples are cooked.
- Once the apples are cooked, remove the skin and mash the mixture.
- Mash and strain through a sieve and add the gelatin sheets at 70 ºC.
- Cool it in the fridge.
- Pour the mixture into the siphon and charge one or two charges.
- Keep chilled.
