Fideua
Fideuà is a sea dish originally from the coasts of the Spanish region named “Comunidad Valenciana”, and specifically from the city of Gandía.
It is made in a similar way to paella. Its main ingredients are: noodles (the most used by specialists is the “fideo número 3”, number 3 noodle. Thick and hollow noodles are not recommended), fish (rockfish, monkfish, cuttlefish and squid) and crustaceans (mantis shrimps, shrimps, Dublin Bay prawns). It is similar to the “arroz a banda” but the rice is replaced with noodles.
It is seasoned with lemon and/or aioli.
