This oil is obtained from sesame seeds, which are also called ajonjolí.

It has a fluid texture at room temperature. It has a toasty and an intense nutty aroma. It is dark and ideal in Asian cuisine. It is eaten with raw vegetables, soups, dressings, sautés, and marinades and used to finish dishes with a dash of raw sesame oil. A small drop is usually added to soups right before serving.

There are many variations in the colour of sesame oil. As an example, the oil which has been cold pressed has no colour because the seeds have not been roasted.
