  • Grate the cucumber, season lightly and drain its juice with a strainer.
  • Mix by stirring the oil with finely chopped garlic into brunoise removing the germ and add lemon juice and Greek yoghurt. 
  • Add the grated cucumber and chopped mint.
  • Add salt and pepper to taste.
