Elaboration
- Boil half of the lemon juice, sugar and agar-agar gelatine.
- Take off the heat, pour into a bowl and add the rest of the lemon juice and ginger. Allow to cool.
- Once cool, mix with a turmix until it looks like cream.
- Store in a piping bag or in a bottle in a refrigerating chamber.
