Medium golden apple 0.7 kg

Elaboration
  • Place the gelatin sheets into cold water.
  • Peel and core the apples and cut them into 1.5 cm cubes. Reserve the core and skin of the apples.
  • Place the apples, sugar, ground cinnamon, water and cornstarch into a saucepan. Bring to the boil.
  • Once the water has evaporated, turn off the heat and, per 1.2 kg of apples (for 10 portions), we add the corresponding amount of agar-agar. Bring the mixture to the boil again and boil for 5 minutes.
  • Then incorporate the gelatin sheets until dissolved and pour the mixture into a mould. Cover the mould avoiding any pockets of air and store in the fridge.
