Elaboration
- Heat the cream and the milk.
- Make the caramel by cooking the sugar at 200 °C
- Add the warm cream and milk mixture to the caramel and mix well.
- Strain through the sieve, add the cream and mix well off the heat.
- Let it cool, fill the siphon with 1 gas charge and leave it aside in the fridge.
