Elaboration
- To make the syrup, cook the ingredients to 121 ºC (combine the sugar and water until the mixture thickens into a syrup).
- Add the peanuts and stir constantly until the liquids evaporate and a sandy-textured sugar mixture coats the peanuts.
- Transfer to a kitchen plate lined with parchment paper, and separate the peanuts while they are still warm (use a cooking tong or a fork to prevent from sticking).
- Keep in an oven dryer to 30 ºC or in an airtight container.
