Elaboration
  • Heat the juice to 80°C.
  • Add the thyme and let it infuse for 10-12 minutes.
  • Strain well to remove all traces of the leaf.
  • Add the sugar and mix until dissolved.
  • Let it cool to room temperature, then add the soy lecithin and mix well.
  • When ready to serve, whip with an electric mixer until very frothy.
