Elaboration
  • Soak the tapioca pearls in the water for about 30 minutes.
  • Heat in a pan stirring gently with a plastic spatula until the pearls are transparent.
  • Cool down, drain and add the lemon zest, grounded cardamom, grounded star anise and crushed freeze-dried raspberry, mixing very carefully.
  • Spread out the mixture on a baking parchment and tray and allow to dehydrate in a stove at 30 ºC.
