  • Soak the gelatin in plenty of cold water.
  • Blend the tomatoes in the thermomix.
  • Strain through a fine sieve or cheesecloth, making sure that there are no seeds left.
  • Mix in the sugar, citric acid and salt with part of the strained tomato. Heat up, add the gelatin and dissolve well, then pour the mixture into a tupperware and leave to set in the refrigerator.
  • with the help of a metal whisk mix the tomato jelly and fill the siphon by applying a gas charge.
