Elaboration
- Finely chop the San Simón cheese with the rind included.
- Heat up the milk in a pot and once it starts to boil add the cheese.
- Stir with a metal whisk at a medium heat until the cheese completely dissolves.
- Remove from the heat, add the cream and let the mixture stand for about 10 minutes.
- Strain through a fine sieve, season with the smoked salt and leave to cool in the refrigerator.
- Fill the siphon, apply the charge, shake and keep in the refrigerator until use.
