Gianduja is a chocolate confection which contains about 30% of hazelnut paste. It gets its name from Gianduia, a Carnival doll that represents the archetypical Piedmontese since Piedmont is an Italian region famous for its hazelnut sweets.
Apart from the classic recipe, modern confectioners give this name to any combination of nuts, chocolate and sugar, such as almonds, dark chocolate and sugar or walnuts, milk chocolate and sugar.
