Elaboration
- Heat the sugar, the water, the glucose and the cream of tartar all together until it reaches a temperature of 152ºC.
- Meanwhile heat the honey until 130 ºC.
- Once both temperatures have been reached, mix the mixtures and cook together until 165ºC.
- Pour onto a silicone mat to cool down and slightly gloss.
- Form cylinders.
- Cut the piece with the help of a knife or scissors and leave to cool.
- Store in a dry place.
