Elaboration
  • Preheat the steam oven to 90 ºC.
  • Beat the eggs and the egg yolks with an electric egg whisk. When foam forms, add the sugar.
  • Mix corn-starch, tea and salt. Add to the previous mixture, mixing well with a rubber spatula in delicate circular movements.
  • Fill the cannelloni moulds (wrapped in aluminium foil). Cook in the oven.
