Elaboration
- Poner el agua en una cazuela y llevar al fuego.
- Cuando hierva, agregar el azúcar y la mitad de las hojas de hierbabuena.
- Hervir durante 1’ y retirar del fuego.
- Retirar las hojas de hierbabuena.
- Agregar las colas de pescado, previamente hidratadas, hasta disolver por completo.
- Añadir el zumo de limón, el ron y las hojas de hierbabuena previamente picadas en brunoise.
- Mezclar y llevar a moldes.
- Refrigerar por 4 horas, o hasta que se solidifique.
- Desmoldar y cortar al gusto.
