Para esta receta, son necesarias las siguientes elaboraciones:
- Para la olla:
- Poner a remojo el garbanzo y la alubia blanca, cocer por separado.
- Elaborar el sofrito pochando la cebolla cortada en dados y añadiendo el tomate al final.
- Cocer la vaina plana a la inglesa.
- Cuando están cocidas las legumbres juntarlas, añadir la patata cascada, el sofrito, y en el último momento, los dados de calabaza y las vainas.
- Condimentar con tomillo y sal.
- Para los panecillos fritos;
- Hacer una mezcla con el huevo, la almendra en bastón, el perejil y el ajo picado en brunoise.
- Trabar con pan rallado hasta que tenga la consistencia suficiente como para hacer pequeñas quenefas de masa.
- Freír en aceite de oliva.
- Emplatar las legumbres con los panecillos fritos encima.
