Shimejis are a group of Asian edible mushrooms whose farming has spread to other countries as well as its gastronomy.
There are many different shimeji mushrooms such as the mycorrhiza, which are difficult to grow and the saprobiontics, among which there are the Buna Shimeji and Bunapi Shimeji (Hypsizygus tessulatus), being some of the most popular and widely farmed nowadays. In fact, kits to grow them at home can be purchased.
The main difference between the Buna Shimeji and the Bunapi Shimeji is their colour. They are the same species but the former is brown and the latter is white because it is protected from light.
