Mirin
Mirin is an essential condiment in Japanese cuisine with a slightly sweet taste. It’s a kind of rice wine similar to sake, but with low alcoholic content. In the Edo period it was drank as a sweet sake, named otoso.
Mirin is used to give flavour to grilled fish or to remove the fishy taste. A small amount of sugar and soy sauce is used to make the sauce.
Mirin is the key to make for making the teriyaki sauce that’s usually added to yakitori.
