Alfalfa sprouts
Alfalfa sprouts are obtained by the germination of the seeds of the alfalfa plant.
These sprouts have amazing nutritional properties, mainly because of their high amount of vitamins, mineral salts and proteins. Proteins account for more than 40% of the total weight of the sprout.
They are easy to prepare and can be eaten raw, alone or with a sauce, in salads, in sautés, omelettes or as an ingredient in a wide variety of dishes.
