Red beans are dark purple, flat and kidney-shaped.
They come from EL Barco de Ávila and La Bañeza in the Spanish region of Leon, but they are grown in many different zones nowadays.
When soaked, these beans lose their purple colour little by little, although the broth comes out quite dark. Red beans are known for their smoothness once cooked.
