Elaboration
- Bring some water to the boil in a pot and remove from the heat.
- Mix egg yolks, sugar and salt in a bowl with the help of a metal whisk and then pour in part of the boiled water.
- Pour the mixture into the pot together with the remaining water and then boil at 82 ºC - 85 ºC and stir gently and constantly with a spatula.
- Strain through a fine sieve and cool in an inverted bain-marie.
- Place in an ice cream maker.
