Elaboration
  • Heat up the smaller part of coconut milk, sugar and tea and mix constantly with the metal whisk.
  • Add the agar-agar when the mixture is at 70 ºC and stir with a metal whisk in order to dissolve it well.
  • Add the other part of the coconut milk off the heat, mix until smooth and then place it in a tupperware in the fridge.
  • Stop the mixture from becoming firm with a metal whisk or a turmix and then put the mixture into a pastry bag.
