Afuega’l pitu cheese is a type of cheese elaborated in Asturias, a province of Spain, and it is one of the oldest cheeses known in the region.
It is traditionally elaborated with raw cow milk, and there are also some elaborations made with pasteurized milk.
There are red varieties which contain paprika.
