Cashews
Fruits of the Anacardium oocidentale, a tree that grows in the northeast of Brazil and in the Guianas.
They have a whitish colour and a C form. They are rich in proteins and unsaturated fatty acids. They contain a high energy value, vitamins B1, B2, E, magnesium and folic acid.
Culinary applications: dried fruits, toasted, salted, with aperitifs, patisserie and varied dishes.
