Cantharellus cibarius – commonly known as the chanterelle or girolle – is a fungus from the Basidiomycetes group that belongs to the Cantharellaceae family, its mushroom is edible.

This mushroom has a nice taste,and it offers plenty of opportunities in the cuisine, either if it is cooked, canned or dried (it can be preserved during a whole year at room temperature). Its flesh its tight, which makes it the perfect accompaniment for meat. The mushroom contains small proportions of Amanitin, but a human would have to eat hundreds of kilos to be poisoned.
