The ancho chili, which is one of the most used dried chillies in Mexico, is a dried poblano chilli.

It is dark red and it measures between 12 and 15 centimetres. Although it is very similar to the mulato chilli, it has a taste with different notes.

Its spiciness varies a lot, from quite strong to slightly hot. Ancho chilli is used in many stews, and it is usually combined with other dried chilies such as the mulato and pasilla to make guacamoles and marinades.
