Picuda olive oil is also known as ´Carrasqueña de Córdoba´. It is for sure the most emblematic variety in Cordoba and it is protected by D.O. from Baena and Priego de Córdoba. In the town of Luque, this oil is called "Pajarero". This name was given because it is said that the oil from that area is so sweet at the time of ripening that birds prick the olives.
Picuda variety makes the taste slightly bitter, a fruity taste of apple and almond. This is a very delicate oil against oxidation.
